Thanksgiving Herb Stuffing

Happy Thanksgiving! Many popular stuffing recipes involve using sausage, but if you’re looking for one that has no meat and just veggies, this one will not disappoint!

What You’ll Need To Make Herb Stuffing:

  • 1 cup butter (2 sticks)
  • 11 cups soft bread cubes (11 oz soft cubed potato bread)
  • 2 1/2 large celery stalks, chopped
  • 8 oz mushroom, chopped
  • 1 medium onion (about 1/2 – 3/4 cups)
  • 1/2 cup fresh parsley, chopped
  • 1 tsp salt
  • 1/2 tsp ground sage
  • 1 tsp dried thyme leaves
  • 3/4 tsp poultry seasoning (love Frontier brand)
  • 1/2 tsp dried marjoram
  • 1/2 tsp freshly ground black pepper

How To Make Herb Stuffing:

  1. Preheat oven to 325 degrees.
  2. Melt butter in pot over medium-high heat. Cook celery, mushroom, onion, and parsley for 8 – 10 minutes. Stir until tender.
  3. Turn off heat and add everything else but the bread.
  4. After spices are mixed into the vegetables, toss with bread cubes until bread is well coated.
  5. In a buttered or greased 9 x 13 baking dish, pour stuffing and cover with foil.
  6. Bake covered for 20 minutes in the middle rack of oven.
  7. Uncover and continue to bake for another 10 – 15 minutes. Keep a close eye on the stuffing to make sure it doesn’t burn or dry out!

This recipe serves 12 and yields approximately 11 cups of stuffing.
