My picky toddlers gobbled this up, so this meal is a win for me! The best part is that it requires less than 5 minutes of prep before it goes into your slow cooker. I would have loved to make my barbeque sauce from scratch, but I was short on time on a weeknight. So, I cheated and used a bottled sauce. Sweet Baby Ray’s all the way!
Serve on wheat hamburger rolls with veggies on the side for a complete meal!
Ingredients:
- 6 boneless, skinless chicken breasts
- 18 oz bottle of bbq sauce (don’t cheap out – buy a good brand!)
- 1 sweet onion, sliced thin
- 1 tsp garlic powder
- 1/4 cup distilled, white vinegar
- 1/4 cup packed, brown sugar
- A couple pinches of red pepper flakes
Directions:
1. Place chicken in crockpot (fresh or defrosted).
2. Pour about 2/3 of the bottle of bbq sauce over chicken, reserve the last 1/3 bottle.
3. Add remaining ingredients into crock pot. Give it a good stir and mix everything up.
4. Cook on low 6-7 hours. Using two forks, shred chicken 30 minutes before serving. Add remaining bbq sauce to the pot to thicken up the sauce.
Enjoy on a whole wheat hamburger bun with veggies on the side. Yum!
